Sweet Roast Salad Bowl

Ingredients

  • 1/2 courgette
  • 1/2 red pepper
  • 1/2 red onion
  • 1/2 sweet potato
  • 1tbsp pumpkin seeds
  • 1tbsp pine nuts
  • 2tbsp maple syrup
  • 2 tbsp olive oil
  • Salt
  • 1tbsp tahini
  • 1 handful rocket
  • 1 handful spinach

Method

  1. Preheat the oven to 180 C.
  2. Chop the courgette, red pepper, red onion and sweet potato into small cubes.
  3. Throw the chopped veg in a large bowl with the pumpkin seeds, pine nuts, 1tbsp maple syrup, 1tbsp olive oil and a sprinkling of salt. Mix it up until the veg is completely coated.
  4. Spread the veg on a baking tray and cook in the oven for 15-20 mins.
  5. Mix the cooked veg with the rocket and spinach in a bowl.
  6. To make the sauce, mix 1tbsp tahini, 1tbsp olive oil and 1tbsp maple syrup.
  7. Drizzle the sauce over your salad and enjoy!
