
Ingredients
- 1 cup plain flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 cup sugar
- 1/2 cup dark chocolate chips
- 1/3 cup of crushed walnuts
- 4 tbsp soya milk
- 1/2 tsp vanilla extract
- 2 tbsp olive oil
- 150g dark orange chocolate
Method
- Mix all of the dry ingredients in a bowl, using a wooden spoon.
- Add all of the wet ingredients (only 2 tbsp of soya milk).
- Mix until you have created a dough-like mixture (add the other 2 tbsp of soya milk if needed).
- Wrap the dough in film and place in the freezer for 20-30 mins (until cold).
- Preheat the oven to 160 degrees Celsius.
- Scoop the dough into balls (approx 1 – 2 tbsp each) and place on a lined baking tray. Make sure they have room to spread.
- Cook them in the oven for 13 minutes and then let cool.
- Meanwhile, melt the chocolate in a bowl over simmering water, stirring continually.
- Dip the cookies in the chocolate and place on a tray.
- Put in the fridge to let the chocolate cool/harden.
