Chocolate Orange and Walnut Cookies

Ingredients

  • 1 cup plain flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup sugar
  • 1/2 cup dark chocolate chips
  • 1/3 cup of crushed walnuts
  • 4 tbsp soya milk
  • 1/2 tsp vanilla extract
  • 2 tbsp olive oil
  • 150g dark orange chocolate

 

Method

  1. Mix all of the dry ingredients in a bowl, using a wooden spoon.
  2. Add all of the wet ingredients (only 2 tbsp of soya milk).
  3. Mix until you have created a dough-like mixture (add the other 2 tbsp of soya milk if needed).
  4. Wrap the dough in film and place in the freezer for 20-30 mins (until cold).
  5. Preheat the oven to 160 degrees Celsius.
  6. Scoop the dough into balls (approx 1 – 2 tbsp each) and place on a lined baking tray. Make sure they have room to spread.
  7. Cook them in the oven for 13 minutes and then let cool.
  8. Meanwhile, melt the chocolate in a bowl over simmering water, stirring continually.
  9. Dip the cookies in the chocolate and place on a tray.
  10. Put in the fridge to let the chocolate cool/harden.
  11. Enjoy!
