
This bowl of goodness is perfect for both lunch and dinner. It takes under an hour to make and is, as easy as, 123!
Ingredients
- 1/2 red pepper
- 1/2 sweet potato
- Olive oil
- 2 tsp oregano
- 1 handful of rocket
- 1 handful of spinach
- 4 cherry tomatoes
- 3 radish
- 2 spring onion
- 2 tbsp sliced olive
- 5g pine nuts
- Dressing of your choice – I chose balsamic
Method
- Preheat your oven to 180 degrees (fan).
- Chop the sweet potato into small cubes.
- Slice the red pepper.
- Place both on a baking tray with the tomatoes, drizzle over the olive oil, sprinkle over the oregano and bake for 20-30 mins.
- Place the spinach, rocket, radish (sliced), spring onions (sliced) and olives in your bowl.
- Once the oven ingredients are done, add them to your bowl.
- Top with pine nuts and your dressing.
- Enjoy!
