Sweet Potato and Veg Bowl

This bowl of goodness is perfect for both lunch and dinner. It takes under an hour to make and is, as easy as, 123!

Ingredients

  • 1/2 red pepper
  • 1/2 sweet potato
  • Olive oil
  • 2 tsp oregano
  • 1 handful of rocket
  • 1 handful of spinach
  • 4 cherry tomatoes
  • 3 radish
  • 2 spring onion
  • 2 tbsp sliced olive
  • 5g pine nuts
  • Dressing of your choice – I chose balsamic

Method

  1. Preheat your oven to 180 degrees (fan).
  2. Chop the sweet potato into small cubes.
  3. Slice the red pepper.
  4. Place both on a baking tray with the tomatoes, drizzle over the olive oil, sprinkle over the oregano and bake for 20-30 mins.
  5. Place the spinach, rocket, radish (sliced), spring onions (sliced) and olives in your bowl.
  6. Once the oven ingredients are done, add them to your bowl.
  7. Top with pine nuts and your dressing.
  8. Enjoy!
