Scrambled Tofu on Pitta

This is one of the easiest breakfasts I’ve made and it tastes AMAZING!

Ingredients:

  • 1 cup Firm Tofu (broken up)
  • 4 Mushrooms
  • 1/4 tsp Tuneric
  • 1 Garlic Clove (crushes)
  • 1 Handful of Spinach
  • 1 Pitta

Method:

  1. Heat some olive oil in a pan on medium heat.
  2. Add the crushed garlic and cook it for 1 minute.
  3. Add the tofu, mushrooms, tumeric and some pepper for seasoning. Cook the ingredients for 5-6 minutes.
  4. Whilst the ingredients are cooking, heat 1 pitta in a toaster.
  5. Add the spinach to the other ingredients and cook until it’s wilted.
  6. Place the pitta on a plate and top with the cooked ingredients.
  7. Enjoy!
